Stuffed Peppers

Another successful dinner! Again, I only did it for two people, if you’re doing it for more, just add extra.

You’ll need:

Fresh peppers (whatever colour you want, I used green)


Taco seasoning (homemade below, if you want to use a store packet, that’s up to you)


Taco seasoning:

1 tablespoon chilli powder

1/4 teaspoon garlic powder

1/4 teaspoon oregano

1/2 teaspoon paprika

1 1/2 teaspoons ground cumin


Preheat oven to 180 degrees

Firstly, cut the tops off of the peppers, remove the middle and rinse. Put the peppers into the oven to allow them to get soft. Then, put on the mince to fry, and whilst it’s frying mix together all the taco seasoning into a little bowl, once the mince is done, shake the seasoning evenly on the mince and mix together. Now, mix some cheese into the mince and let it melt in, turn on low. Pack the fried mince into the peppers (I used four, two each – trust me, very filling!) top with salad, sour cream, salsa etc. then put onto a tray and put it into the oven until the cheese is melted on top.

Now add whatever extras you wish, rice on the side, salad, sour cream, salsa etc.
