Healthy Chocolate Chip Cookies (Gluten/Dairy-Free)

I am super excited about this recipe because I have been trying to get it right for a few weeks now – and after a long day weekend of baking, I’ve finally cracked it!

You’ll need:

1/3 cups coconut flour

2 free-range eggs

1/4 cups coconut oil

1/4 cups 100% pure maple syrup

1 teaspoon vanilla extract

A handful of semi-sweet chocolate chips

Directions:

Hand whisk together the coconut flour, eggs, coconut oil, maple syrup and the vanilla. As you whisk you should notice the mixture thicken slightly as the coconut flour soaks up the wet ingredients – if the mixture remains runny like water, add a small amount more of coconut flour. When the right consistency is achieved, add in your chocolate chips. Then using a tablespoon, lay out your dough onto a lightly greased (with coconut oil) baking tray and bake at 180 degrees for 12 minutes or until the cookie edges are a nice golden brown.
